    Avocado Feta Orange Salad with Baby Spinach and Pumpkin Seeds : Easy Lunch Recipe



    This salad is honestly the brightest, most colourful and most delicious salad I have ever whipped up in the comfort of my own kitchen.

    This simple recipe needs exactly seven ingredients and trust me, they're really, really easy and quick to prepare! No cooking necessary; only some slicing and dicing skills are needed (and you don't even have to be good at those two things).

    The 7 Ingredients:
    • A large handful of baby spinach
    • A quarter of a big, sweet orange
    • Half an avocado
    • Feta cheese (I used herbed, cubed ones)
    • Sunflower seeds
    • Extra virgin olive oil (EVOO)
    • Freshly cracked black pepper

    The How-To:

    1. Cut orange into little pieces and slice avocado thickly.

    2. Toss clean baby spinach, orange pieces and avocado slices in a bowl. Add feta cheese cubes and sunflower seeds. (note: I had to physically peel open every tiny sunflower seeds and got to count how many I decided to use: all 20 of them.)

    3. Drizzle EVOO and add freshly cracked black pepper all around.

    All done!


    I find that the avocado, orange and pumpkin seeds contribute the most flavour out of all ingredients. I used to use avocado in a few recipes back when I was studying in Christchurch, New Zealand and had never used avocado in a homemade recipe here in Malaysia, so I'm incredibly pleased with how this recipe turn out so good!

    I found this recipe on Refinery29 in Your Week Just Got A Whole Lot Healthier post where a few other simple and delish recipes can be found. I did tweak the recipe a little bit, like switching blood orange with plain orange, using herbed feta cheese and deciding the amount of each ingredient to use myself.

        Do try it and let me know how it goes OK? I bought pre-packaged baby spinach from Jaya Grocer which was very fresh and pretty delish.
        Shah got us a new camera. I'm a terrible photographer so the camera really does the work for me. And yes dinner soonnnnnnn.
